Our collaboration with Yucho Shuzo, a sake brewery in Gose City, Nara Prefecture, marks its fifth year in 2025. Nara Brewing Co. presents "UNDERWATER", while Yucho Shuzo releases "Kaze no Mori ALPHA 8", a sake brewed with brown rice.
The 2025 "UNDERWATER" is crisp and dry, with fruity ginjo aromas reminiscent of strawberries and apples. By combining distinctive brewing water, yeast, and additional ingredients, we've created a flavor that transcends conventional beer.
For brewing water, we use the same ultra-hard water that Yucho Shuzo draws for sake brewing—a rarity in Japan. Sourced from 100 meters underground, it is rich in minerals like calcium and magnesium, which shape the distinct character of their sake.
For fermentation, we use No.7 sake yeast, the same strain as in "Kaze no Mori." Hops are not used, as they can inhibit sake yeast activity. This allows the yeast to fully express its delicate aromas.
We also incorporate koji and soyashi water, both key to "Kaze no Mori" sake brewing. Used since the Muromachi period, soyashi water naturally suppresses unwanted bacteria, creating an optimal environment for fermentation. In "UNDERWATER", its lactic acidity adds depth and complexity.
The result is an exceptionally dry and clean beer with delicate aromas from sake yeast. As you sip, ripe strawberry and apple notes emerge—an experience distinct from beer yeast fermentation. This collaboration blurs the line between sake and beer, offering a unique perspective on both traditions.
